Tuna Salad Stuffed Avocados
A delicious variation of tuna salad - instead of serving on a bed of lettuce, serve inside of half of an avocado!

- 4 cans tuna - drained safe catch is best
- 2 medium avocado 1 to add to the tuna salad, one to serve the tuna salad in
- 3/4 cup pickles - chopped
- 1/2 cup mayonnaise avocado mayo, or make your own for healthiest option
- salt and pepper - to taste
Open tuna cans, strain as much liquid out as possible.
Chop pickles finely using food prcessor
Cut avocado in half, pit and mash well in a bowl
Add tuna, pickles, and mayonnaise to mashed avocado
Mix well. Taste and add salt and pepper to taste.
Add/subtract mayo as needed for preferrred texture.
Scoop out preferred amount of tuna salad into half an avocado. Serve and enjoy!
Tuna salad is very versatile! You can add or subtract the fats, mayo and avocado, to your preference. You can also add more pickles if you like it crunchier and zingier.
I love to serve this tuna salad right inside of half of an avocado, but you can also cut the avocad and serve it alongside the tuna salad in a wrap or on a sandwich for some extra carbs, if desired.
