Avocado Chia Seed Pudding (Vanilla)

This spin on a healthy classic supplies healthy fats, protein, and fiber. It's a scumptious little snack packed with nutrients!

Equipment

  • 4 glass jars small, glass jars, I used small baby food jars
  • Blender any blender will do

Ingredients
  

  • 1/2 medium avocado
  • 1 scoop vanilla protein powder
  • 8 oz coconut milk substitute any milk you prefer
  • 1 tbsp chia seeds

Instructions
 

  • Blend your 8 oz of milk with your avocado in the blender. Blend well.
  • Add in the protein powder and blend just a bit more.
  • Split the milk mixture into the 4 jars evenly.
  • Split the chia seeds evenly among the jars. Stir well.
  • Add a few chia seeds on top for a little flair!
  • Wait 24 hours for the chia seeds to soak up the water and the gel texture to set. Then enjoy!

Notes

  • Eat within 48 hours before the avocado begins to oxidize
  • Any milk substitute will do, but be aware that the consistency may change so you may need a bit more or less milk.
