Avocado Chia Seed Pudding (Vanilla)
This spin on a healthy classic supplies healthy fats, protein, and fiber. It's a scumptious little snack packed with nutrients!

4 glass jars small, glass jars, I used small baby food jars
Blender any blender will do
- 1/2 medium avocado
- 1 scoop vanilla protein powder
- 8 oz coconut milk substitute any milk you prefer
- 1 tbsp chia seeds
Blend your 8 oz of milk with your avocado in the blender. Blend well.
Add in the protein powder and blend just a bit more.
Split the milk mixture into the 4 jars evenly.
Split the chia seeds evenly among the jars. Stir well.
Add a few chia seeds on top for a little flair!
Wait 24 hours for the chia seeds to soak up the water and the gel texture to set. Then enjoy!
- Eat within 48 hours before the avocado begins to oxidize
- Any milk substitute will do, but be aware that the consistency may change so you may need a bit more or less milk.
