Avocado Chia Seed Pudding
There are many ways to make chia seed pudding, and in the past I would have just added a tablespoon of chia seeds to coconut milk and let it sit overnight, but then I became an avocado farmer! No recipe is safe from my avocado experiments, and this one was made way better, I know you'll love it.

Ingredients
Milk – Any milk will do, though different ones will equal a different taste and texture. I make mine with coconut milk and it adds a bit of extra sweetness.
Chia seeds – You can get them from any bulk food bins or in some baking aisles at the store.
Vanilla protein powder – My favorite, dairy-free, option is Equip Prime Protein but any will do.
Avocado - You can buy avocados fresh from our California grove when in season (approx. March-August). Visit our shop page, but any avocados will do!

How to Make Avocado Chia Seed Pudding
Step 1: Grab your blender. Put the milk, your 1/2 of an avocado, and protein powder into the blender and blend until smooth.
Step 2: Line up your jars, fill up with your mixture. I use about 2 oz each in 4 jars to make small serving sizes. You can also do larger bowls and split the milk in half.
Step 3: Measure out the chia seeds, split evenly into each jar. Stir it up.
Step 4: Add some chia seeds on the top for show, and let it sit overnight in the fridge. Enjoy!
Tips for Success
- Definitely use a blender for a smooth texture. I tried to just mash it before with a fork and it doesn't work as well! You don't want this chunky, it's not guacamole!
- The protein powder I use is a beef protein isolate, so plenty of collagen which makes this very jelly, like Jello pudding. If you use a dairy-based protein powder it may have a different consistency, you may have to play with amounts.
Recipe FAQs
Can I make this ahead of time? Yes! This recipe needs to be made in advance in order for the chia seeds to absorb the liquid and turn into a pudding-like texture.
Is this a good snack for kids? My kids love this snack! Remember those Jello brand puddings we ate in the 90s? Think that flavor, but so much healthier.
How long does it keep? Because the avocado will still oxidate and begin to turn brown, I try to eat these within 48 hours. The good news is it takes no time at all to spin up, so you will totally have time to make two batches per week if need be.

Avocado Chia Seed Pudding (Vanilla)
Equipment
- 4 glass jars small, glass jars, I used small baby food jars
- Blender any blender will do
Ingredients
- 1/2 medium avocado
- 1 scoop vanilla protein powder
- 8 oz coconut milk substitute any milk you prefer
- 1 tbsp chia seeds
Instructions
- Blend your 8 oz of milk with your avocado in the blender. Blend well.
- Add in the protein powder and blend just a bit more.
- Split the milk mixture into the 4 jars evenly.
- Split the chia seeds evenly among the jars. Stir well.
- Add a few chia seeds on top for a little flair!
- Wait 24 hours for the chia seeds to soak up the water and the gel texture to set. Then enjoy!
Notes
- Eat within 48 hours before the avocado begins to oxidize
- Any milk substitute will do, but be aware that the consistency may change so you may need a bit more or less milk.
