Tuna-Stuffed Avocados

Tuna salad is one of my family's staple summer go-to recipes. I make the version with tuna, pickles, mayo, and of course, my added mashed avocado - super simple! Even if you love the more complex type of tuna salad recipe with boiled eggs, celery, onion - I've even seen peas and corn! - It will still taste great served inside an avocado. You can also just borrow my recipe if you don't have your own tuna salad fave.

Why You'll Love This Recipe

Fresh ingredients – Tuna salad served with fresh avocado (ideally straight from the grove - us!) brings flavor profiles you can't find in the grocery store, and adds a creaminess you can't get from mayo alone.

For the whole family – My kids love tuna salad with some crackers or chips, I eat mine straight out of the avocado, and my husband loves tuna salad sandwiches.

Great leftover or for meal prep – You can make a big batch of this tuna salad in about 7 minutes and eat it all week long. We love cooking here, but we also love to keep our time in the kitchen optimized!

Ingredients

Canned tuna – I try to eat as clean as possible, so we go for tuna labeled Safe Catch, which ensures individual mercury testing.

Pickles – I'm currently growing pickling cucumbers so I can make my own, but until then, my favorite brand is Grillo's Pickles.

Mayonnaise – I go for a seed-oil-free option; my favorite is Chosen.

Avocados - You can buy avocados fresh from our California grove when in season (approx. March-August). Visit our shop page, but any avocados will do!

How to Make Tuna-Stuffed Avocados

Step 1: Open and strain all of your tuna cans and add the tuna to a large bowl. There are a lot of tools out there for straining tuna, but I find that using a simple cheese cloth and some elbow grease gets the most liquid out.

Step 2: Dice, chop, blend up your pickles.

Step 3: Cut open your avocados and scoop out the flesh into the bowl with the tuna. Save some avocados to serve your tuna salad in. If you don't have an avocado scoop, you can buy one in our shop!

Tips for Success

- Pre-blend your avocado if you want a very creamy tuna salad. Add your avocado whole and mash it up with a fork or spoon if you want avocado chunks in your salad.

- Depending on the pickle brand, you may want to strain your pickles with cheesecloth too. Do this after chopping!

Recipe FAQs

Can I make this ahead of time? Yes! This is a great recipe to make on a Monday for lunches all week. It also travels very well in a lunch box or cooler.

Can I freeze the leftovers? I believe that you can freeze anything, but it comes with risk! Anytime I've tried to freeze liquid-y recipes like this, or recipes with avocado, the consistency changes once you thaw it. For your best bet, make a big batch and eat over a week. This keeps well in the fridge for up to 5 days.

What goes best with this? This recipe is great as is, served right inside of half of an avocado. Eat it straight out with a fork or spoon. If you want a little crunch, it's great with crackers or chips. You can also serve this alongside a bed of lettuce for a full tuna salad experience.
